Cowboy Ciao opened February 12, 1997, and it was well into 1998 before information operators stopped telling callers we didn’t exist because they tried Chow instead of Ciao. Too clever for our own good? Maybe clever isn’t the best choice of word (stubborn is probably a better fit), but surely we’ve retained a sense of irreverence this whole time.

Cowboy Ciao began as a neighborhood joint featuring wine-friendly fare focused on Italy, Mexico and the American Southwest and an eclectic wine list of 88 selections. It has evolved into a ‘Big City’ restaurant featuring a Modern American menu with Southwest accents and Global influences, sporting an internationally-acclaimed wine list hovering around 1800 selections.

Through it all, our goal has remained simple: thrill each guest every visit with a memorable entertainment experience.

What began as Tex-Mex Italian 18 years ago has evolved into Modern American with global influences. Whether you’re not sure what you’re craving, or you’re with a diverse from foodies to finicky, the Cowboy Ciao menu offers something for everyone. Join us for lunch without feeling cheated –you’ll find the most popular dinner items offered at lunch as well.

Chef Lester Gonzalez has been here nearly a decade, having joined us fresh from Le Cordon Bleu/SCI. Les has gently tweaked the menu, adding his own personal spin –including a dash of his Native American heritage–. Pastry Chef Country Velador will satisfy your sweet tooth with her whimsical desserts, unusual ice creams, and birthday cake of the day –yes, we know you love birthday cake! Libations share star billing with the chow at Cowboy Ciao. Draft & craft bottled beer, craft & classic cocktails shaken with fresh-squeezed juices, fresh herbs, aguas frescas, and only bottled mixers [no soda guns, ever]. A wine list nearly 100 pages log in a 3-ring binder will either thrill you to no end, or make you slam it on the table as you demand a gin & tonic (no really, it *has* happened)! Whether you’re a novice or an expert… wait, never mind. We say everyone is an expert, because you know what your palate likes. Don’t feel like persuing the list?
