Diners looking for “Food, Affection and Community” — that’s the restaurant’s tagline — can expect a fast-casual spot by day and a full-service restaurant at night. The menu will include gluten-free, organic, and hormone-free ingredients, according to a press release, used in dishes such as Blueberry Protein Pancakes during breakfast, an Organic Hummus Protein Power Salad at lunch, and flax seed flatbreads for dinner.
The seasonal “wellness menu” will focus on “elevating healthy food,” with recipes that aim “to strengthen the immune system and reduce stress level.” The restaurant will emphasize gluten-free, organic and hormone-free ingredients, encouraging diners to increase their daily probiotic and nutrient intake. Sort of like dining was always meant to be, before the dawn of deep fryers, heavy cream sauces and saltshakers.
The lineup could include nitro cold brew coffee on tap with a vegan croissant for breakfast; on-tap kombucha and organic hummus protein power salad for lunch; and a cold-pressed cocktail with a whole-wheat and flax crust flatbread for dinner.
Taking on this ambitious task is chef Paul Grzenia, formerly of Talavera at Four Seasons Resort Scottsdale. But don’t expect fancy. Farm & Craft will be a fast-casual, counter-service restaurant during the day, morphing to full-table service at night.
