Sweet Dee’s Bakeshop is owned by a mother-daughter duo, Lynda and Danielle (Sweet Dee) O’Day. Danielle, a self-taught baker, began creating specialty treats and cakes in her home kitchen at a young age. Due to her unique and delicious desserts, she quickly became the go-to baker for friends and family. With demand growing, she outgrew her home kitchen and eventually opened Sweet Dee’s Bakeshop in June 2018. The shop features an array of pastries, breakfast items, lunch options, and a full coffee bar.

Some of the signature products at Sweet Dee’s Bakeshop include gluten-free, dairy-free, and vegan treats, custom cakes, and their popular ‘Dee’s Nuts’, which are miniature baked donuts made primarily with almond flour, honey, and eggs. They also offer various holiday-themed items like chocolate Santa figures filled with house-made Christmas cookies or mousse cakes disguised as everyday fruits or objects. The pastry case is designed to make every customer smile when they walk in the shop.

What production tips can you share from Sweet Dee’s Bakeshop?

One production tip offered by Danielle O’Day is cross-utilizing items made for custom orders in their everyday pastry case. For example, if they have an apple pie cake going out on a Friday morning, they will make apple pie stuffed croissants or apple pie macarons for the weekend using the same filling. This reduces storage space requirements and ensures their pastry case remains fresh and up-to-date with seasonal offerings. Additionally, they repurpose leftovers creatively to reduce food waste; for instance, cake leveling scraps become cake pops or leftover sugar cookies are transformed into house sugar cookie syrup. Leftover brioche doughnuts are cubed up and used in bread pudding with rotating seasonal custard flavors. A stand mixer is mentioned as the essential piece of equipment for their daily operations.

Danielle has been named a featured chef at The James Beard Foundation’s 2019 Phoenix Gala dinner and named one of the Women who Move the Valley by Arizona Foothills. Sweet Dee’s has won “Best Gluten Free Bakery” by Phoenix New Times in 2018 & 2021. Won Best of Scottsdale Award – Category of Bakery 2022
